65 Recipes for Using and Preserving Green Tomatoes

Once the first hard frost hits, tomato season is officially over. Here are 65 recipes for how to use, cook, fry, can, and preserve GREEN tomatoes that you pick the day before your first frost!

Whelp. It’s official. Tomato Season is winding down. I’m feeling the chill in the air and it’s only a matter of time till the first frost. If your tomato vines are looking like how mine usually do this time of year it’s kind of disappointing to look at all the fruit that won’t be ripening before it’s too late. Some years I’ve had 20 or 30 pounds (or more) of tomatoes that still could be used to feed our family!

With a little creativity and a few good recipes, there’s no reason to call it a loss. While you could just let them ripen indoors, you may be feeling adventurous enough to try a tasty recipe like Green Tomato & Apple Chutney or one of the 64 other choices I’ve compiled here!

  1. ooh what a great list! The Lord is merciful! You were right to pick those tomatoes and put them to good use. May I ask how many plants you grew to get such a big yield this year?

I’ve never had anything with green tomatoes, it’s not really a thing here. Then again, we never had more than a few plants growing up, so we would just let the tomatoes left mature indoors.

    1. I can’t say for sure how many I had, but I’d say the bulk of the yield came from the 18 or so heirloom & cherry tomatoes in the Kitchen garden. I had just as many, if not more, canning tomatoes in the Pantry Garden and I can only remember bringing in two bushels from them.

As it stands, I’ve never had anything from green tomatoes either. Every recipe I clicked on this week to try had something in it I didn’t have in the pantry 🙂 Guess I’d better get menu planning for next week!
